AUB-SVP is a concept by Belgian architect Bart Lens and his son Joris. The building of AUB-SVP has a rich history. The facade of the building refers to one of the former entrances of the Cinéma de la Monnaie. Antique ‘garçons’ are neatly lined up on the stone counters, while newspaper cuttings on the wall explain the history of the building. The restaurant is situated in the heart of Brussels, on walking distance from the Grand Place and the central station.
AUB-SVP is constantly doing research into reliable, sustainable food. We experiment with seasonal vegetables, local and organic products and by-catch. Surplus food is processed in a creative way and we respond to the increasing demand of vegan food. These themes are introduced to the public via diverse pop-up events.
AUB-SVP is enjoying good food at affordable prices. The chef cooks ‘behind the counter’, which at the same time acts as an open kitchen. He experiments with flavors and textures that result in healthy and unusual combinations. Every dish is served with traditional bread from Brussels’ best artisan baker Yves Guns. Exciting drinks contribute to the full experience, ranging from organic wines and beers from Brussels to homemade cocktails and lemonade.
AUB-SVP means ‘please’ in Dutch and French and for us it stands for a friendly, personal and multilingual service in a pocket interior.
